Blueberry pie a crisp end to your meal

Fresh blueberries are so juicy, and their sweet tartness is wonderful for desserts and baked goods. This blueberry crisp is such a treat to end off a meal, and the colour is a luxurious touch. Serve with thick cream or ice cream.

Serves six

Filling

3 cups fresh blueberries

1.5 Tbsp biscuit macaroons

¾ tsp apple pie spice

½ cup brown packed sugar

1 teaspoon cinnamon

½ cup flour

Topping

½ cup flour

2 Tbsp butter

1 cup brown sugar

½ cup oats

2 Tbsp melted margarine (if parev, or butter)

Method

Combine the filling ingredients in a medium size bowl and mix well;

Mix together all the topping ingredients in a separate bowl;

Line a pie dish with the filling mixture, crumble over the topping;

Bake at 190°C for about 30 minutes until golden and oozing blueberries.

Tip

If you have left-over topping, you can also sprinkle it onto fruit, over apple slices, or add it to muffins before baking.
